Vegan Fermented cashew spread ( cheese )

Today I’m happy to share with you an amazing recipe. Done with simple ingredients, lovely as cashews and tastes very cheesy. For those vegan who miss their cheese flavour or want to eat something healthier and with more umami flavour.


320 gr raw cashews

600 gr water

6 gr salt

2 tbsp probiotic juice ( sauerkraut liquid)

4 tbsp white wine vinegar

2 tbsp savoury nutritional yeast

Lots of love.


Soak the cashew in the water for about 6-8 hours. Then rinse them generously with running water. Blend them with 1/2 cup of water until smooth. Once they are smooth mix in some probiotic juice, the salt and leave at room temperature for 12-18 hours.

Once this time has passed add in the vinegar and then savoury nutritional yeast. Leave out for another 2 hours and then put into the fridge.

I have also try to age a log that I made to create a bit of a crust. Let’s see how it goes.

The flavour is very funky and nutty. I personally love it. Try it with avocado and tomato or on some toasted multigrain bread.
