Sourdough vegan pancakes

My son woke me up very early the other day, was still dark and the stars where still flashing sparks of light in the blue sky.

He said : ” Dad pancakes”

So I said : Ok

Pantry empty, no cow milk. Just coconut milk.

No eggs, just psyllium husk powder. Only wholemeal flour.


  • 600gr flour
  • 700 gr coconut milk
  • 6 gr Baking powder
  • 20 gr rice malt
  • 50 gr of sourdough starter
  • 6 gr psyllium husk
  • Water to adjust consistency of the mixture.
  • Good pinch of salt


Let’s start preparing this fluffy, tasty vegan pancakes:

Start by mixing all your dry ingredients together. Sieve the baking powder please.

Add your liquids and starter previously combined and mix energetically until it’s smooth.

If the texture is too thick, add a bit more water, until you reach your favourite texture.

Let it rest for 30 minutes, then start frying them as a usual pancake.
