Sourdough vegan flat bread

Today, for all the lovers of flat bread or pita this is my recipe:

Simple as never before.


  • 150 sourdough starter
  • 400 gr whole meal flour
  • 20 gr mixed seeds
  • 6 gr salt
  • 50 gr olive oil or coconut oil
  • Mix the starter, 295gr of warm water for a minute. Add the flour the salt and mix for about 10 minutes or until the gluten structure has developed, after that you can rest the dough for about half an hour. At this point add the oil and keep mixing for another 10 minutes.
  • If you want to prepare the dough in advance for the day after, after the 30 minutes of rest put it in the fridge covered with some film.
  • Now it’s time to roll the balls for the flat bread.
  • Cut the dough into 10 balls roughly of 60-70 grams. Rest them on a dusted surface with some flour for 1 minute. Roll them into your hands and the help of some oil if too sticky.
  • Rest them for 5-10 minutes. Or until that are easy to flattened down with your rolling pin or with your hands if you are a more professional chef.
  • Roll them not thicker that 5 mm. Cook them in a hot pan, or into an hot oven. Make sure you leave them nice and soft.
  • Use your vast imagination to do whatever you like with them. Quick pizzas, quick wraps, tortillas, dip’s crackers. Enjoy your self.
