Gluten free vegan bread (100% hydrated)

Here we are guys, today I’ve tried this recipe at work and came out to be a good dough. I liked it.
Every thing can be improved, but this had a great result already. I could happily say that this bread could be sold in any bakery.
Let’s start from few basics informations.
We need to create a glutinous network. As I know quite hard without gluten. So we are going to emulate that with some xanthan gum. Xanthan gum is a natural thickener obtained trough the fermentation of corn starch, that means that it’s also gluten free itself. You can use this emulsifier or thickener in so many uses, I will show them on this blog in the future.

Ingredients : 

  • ​Rice flour 500g
  • Corn flour 500 g
  • instant dry yeast 6 g
  • Salt 25 g
  • Water 1000 g
  • Xanthan gum 25 g
  • Chia seeds 20 g


Place in a mixing bowl the water the rice flour and the gum. Mix them with a wisk until you reach a great creamy texture.

It should look like soft pick whipped cream.

Add the corn flour, the yeast and the chia seeds keep mixing for 5 minutes, add the salt and mix for an other 3 minutes.​

[wpvideo 8CCo771y]​If you have an electric mixing bowl (KitchenAid Artisan) or anything similar you can use that. It will help you a lot. If you have a somenthing like a food processor (Bellini mixer and cooker) you can use that too, as long as you cut down the ingredients by half.

Once the mixture is ready let it rest for 5 minutes and start folding it over like showed in recently posted video.

Because this mixture won’t be elastic you can fold it as many time as you want, the only thing it will be very wet and you’ll have to use quite a bit of gluten free flour and maybe a spatula, to help you scratch the bottom and the sides.

Cut your shape of dough and start rolling it on a generously dusted surface.  Shape some loaf or rolls out of your dough about 300g – 400g and gently put them on a tray and let it rise until it doubles in size.

Now the bread it’s ready to be baked. Preheat the oven at 200 degrees and put your bread in.

Bake for 30-45 minutes until your bread is golden and sounds hollow.

Let it cool down for at least an hour and enjoy it with your favourite meal…
