Banana, coconut and lemon slice vegan

Hello again my friends, today I want to share with you something that has really surprised me, something that has changed my approach to food, something that made me discover the vegan and glutenfree sweets , something that made my mouth watering when I first tasted it, something that good that my kids and wife loved and appreciated a lot, something that you have to give it a go. No oven baking needed. You will need to have a Food Processor,some baking paper, oil spray, a baking tray, and the following ingredients:

  • Oat ( for gluten free options, use puffed rice or anything else gluten free).
  • Pitted dates
  • Fine desicated Coconut 
  • Coconut oil
  • Marble syrup
  • Vanilla essence salt
  • Lemons
  • Banana

You will just need an hour of your time and enjoy the slice.

Let’s start from the base’s ingredient:

TIP: triple the amount for using my size tray, about 30cm x 15cm x 2cm don’t worry if you don’t find something of this size use anything close to this sizes.

  • 3/4 of a cup of rolled oat
  • 1 cup pitted dates
  • 3/4 of a cup of desicated coconut
  • 1/3 of a cup of coconut oil 
  • 2 tbsp vanilla essence 
  • 1 pinch salt.


Put all the ingredients into a Food Processorand let the machine blend them until you have a sticky rough dough.

Line a tray ( 30 cm x 15 cm x 2 cm) with some spray oil and baking paper, put the mixture on the bottom of the tray and start spreading it down by pressing it with your fingers, you can slightly wet your fingers with some water if the dough sticks to much. 

Let set in the fridge until you are ready with the next part.

  • Juice of 4 lemons ( the rind of one)
  • 160 gr banana (approx 2 medium size banana)
  • 1/4 of a cup of maple syrup
  • 1/2 cup of desicated coconut
  • More desicated coconut to sprinkle on top.


Use again your Food Processor:

Grate your lemon (I love to use my microplane for zest), and mix it with the lemon juice.

Put into the food processor the maple syrup, the lemon rind and juice, the banana, and the desicated coconut, 1 pinch of salt and blend it until it’s nice and smooth, don’t over blend it, otherwise it’ll became warm and it will lose all its goodness.

Pour this curdling mixture on top of the chilled base that you prepared before.

Let it chill over night if possible. Or you can serve after 40 minutes.

Before you cut it, sprinkle your slice with some fine desicated coconut. 

TIP: when you slice it use a warm knife. I usually keep my knife into a tall jug with hot water and just before I slice every piece I’ll dry it out with a towel and I proceed to the cut.
