Chocolate and apricot brioche

To start this amazing brioche you need love And love and love. I love to eat this amazing bread with my cashew cheese, but you can enjoy it as you prefer.


  • 1000gr strong flour
  • 50 gr milk
  • 12 eggs
  • 50 gr sugar
  • 28 gr salt
  • 50 gr dry yeast or 350 gr sourdough starter
  • 495 gr butter
  • 150 gr diced dried apricot
  • 140 gr chopped dark chocolate


Start by chopping your fruit and chocolate and put them in the freezer.

Now mix all the dry components in a mixing bowl and add eggs and milk.once all the ingredients are combined and the dough doesn’t stick to the bowl slowly add the butter ( soft). Mix the dough until the butter is combined. Now get your dried fruit and chocolate and add it to the dough.

Do this process in max 1-2 minutes so that the chocolate doesn’t melt.

Rest te dough for Half an hour covered with cling wrap.

Cut the dough into 4 pieces of roughly 400 gr. Roll it into small logs making sure that the open ring of the loaf is on the bottom, if you are using sourdough make the brioche prove until it doubles in size.

Let it proof until it doubles in size. And bake it in a preheated oven at 200c, once you put the bread in keep baking for 30 minutes at 160.

Once it is ready brush it with an egg wash, wish will be made with 1 egg and 50 g of milk.

Enjoy your bread toasted.
